These Chili Lime Chickpeas are a delicious and easy side dish with so much bright flavor. Chickpeas, aka Garbanzo beans, are a favorite of mine. They are very versatile, with recipes including hummus, side dishes, easy meals and soup. These chickpeas would taste great in burrito bowls, tacos or on top of a salad, but I usually eat them with a spoon before they make it to the table :).
About the Chili Lime Chickpeas
This recipe makes enough for 4 servings, but you can easily double it and have more delicious chickpeas. The lime juice and cilantro can be increased and/or decreased to your liking. I am a big fan of lime juice, but if you aren’t you can certainly adjust the amount.
Put chickpeas in dishPour in the sauceStir to coat
1-15 ounce can of chickpeas (garbanzo beans), drained and rinsed
1 tablespoon olive oil
1 garlic clove, minced
1/2 – 1 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon chipotle chili powder
1/4 teaspoon salt
1/2-1 lime, juiced
1/2 cup feta
2-3 tablespoon fresh cilantro, chopped
Fresh ground pepper, to taste
Instructions
Preheat oven to 375 degrees. Spray a small glass or ceramic baking dish with cooking spray. Add the rinsed and drained chickpeas.
In a small bowl, whisk together olive oil, minced garlic, juice of 1/2 lime, cumin, chipotle chili powder, regular chili powder, salt and pepper. Pour sauce over the chickpeas and stir to coat.
Bake for 15 minutes. Remove from the oven and stir in fresh cilantro and feta cheese. Additional lime juice can be squeezed over top if you’d like. Enjoy!
