Tips for making soft Rice Krispies treats
Don’t push the Rice Krispies down into the pan, they’ll become rock hard with compression, lightly press them down, just until they are spread out in an even layer.
Melt the butter slowly, like painfully slow, watching-paint-dry slow, I’m exaggerating, but seriously, melt very slowly.
Use slightly damp fingertips to gently press the Rice Krispies into the pan, so you don’t end up with Rice Krispies treat fingers, that’s not necessary a bad thing because then it’s snack time.
1/3 cup (9 grams) freeze dried strawberries, blended/pulsed into a fine dust/powder
1 teaspoon vanilla extract
pinch of salt
6 cups Rice Krispies cereal
15 lemon Oreos, divided
4 ounce bar white chocolate
Instructions
Prepare a 9×13 inch pan by spraying it lightly with cooking spray, set aside.
Crush up 15 lemon Oreos into coarse crumbs (pea size), set aside.
In a large pot over low heat, melt the butter. When nearly melted, add all but 1 cup of mini marshmallows to the pot. When the marshmallows start to melt, add the freeze dried strawberry powder. Continue to cook on low and occasionally stir until all the marshmallows are melted.
Remove pot from heat and stir in vanilla extract and pinch of salt. Next, add Rice Krispies cereal, remaining 1 cup of mini marshmallows and 2/3 of the crushed Oreos. Stir all together until everything is well distributed and combined. Transfer to the prepared 9×13 dish. Press gently into an even layer with slightly damp fingertips.
Next, melt the white chocolate slowly in the microwave, 20-30 seconds at a time, stirring in between, until completely melted. Spread over Rice Krispie treats*. Sprinkle on the remaining lemon Oreo crumbs. Let cool until chocolate is set and cover until ready to enjoy. These will stay fresh for 5 days in an airtight container at room temperature (if they last that long).
Notes
I like to transfer the melted white chocolate to a Ziploc bag, snip off the tip and drizzle the white chocolate on to the top of the treats, but this is an extra step and not necessary.
This was absolutely wonderful. I fixed an entire pan and it was gone by morning. This would be great for taking to a carry in event.
